Fried egg cheeseburger with yolky egg, arugula, and grilled onions on a plate.

This burger is so easy to make and the yolk and toppings make it a uniquely delicious burger. The silky yolk breaks when you push down the top bun, making every bite full of flavor. It will quickly become part of your dinner rotation!

Enjoy it with our fan-favorite fries, including Parmesan Truffle Fries with Truffle Aioli, Homemade Seasoned French Fries, or Spicy Cajun Fries. If you want even more flavor, use one of our spreads, including Spicy Chipotle Mayo Sauce, Truffle Aioli (Truffle Garlic Mayo), or Wasabi Mayo Aioli Sauce.

    About Fried Egg Burgers

    • Taste - Fried egg burgers combine savory ground beef and rich egg yolk for a decadent and satisfying burger. Add your favorite toppings for extra deliciousness.
    • Texture - The medium rare beef is tender and juicy, the egg yolk is runny, and the bun is firm.
    • Effort - You just need to make the burger patties, fry the eggs, then add toppings. To simplify this recipe, omit some of the toppings.
    • Time - It takes less than 15 minutes to cook the patties and eggs. Then it takes just a couple minutes to assemble the burgers.

    Ingredients

Ingredients for a fried egg burger, including buns, ground beef, tomato, grilled onions, cheese, and eggs.
    • Neutral cooking oil - We recommend a neutral cooking oil like avocado oil, grapeseed oil, or vegetable oil because they won't burn the burger patties. They also have minimal flavor and won't change the taste of the burger.
    • Lean Ground beef - Lean ground chuck, sirloin, or brisket are all tasty patties.
    • Brioche bun - Brioche is a fluffy and buttery bun. It's rich and lightly sweet flavor balances the other ingredients.
    • Eggs - Fried eggs have a delicious runny yolk.
    • Sliced cheese - Use your favorite sliced cheese for this burger. Some great options include sharp and white cheddar, gruyere, bleu cheese, and muenster.
    • Onions - Onions add a rich and pungent flavor to the burgers. Caramelized Onions add a sweet onion flavor while thinly sliced raw onions offer a brighter and more robust flavor.

    See recipe card for quantities.

    Substitutions

    • Arugula - Use arugula instead of lettuce for a sharp and peppery accent.
    • Bun - Instead of brioche, use a classic white bun, sesame seed bun, potato bun, or pretzel bun.
    • Wagyu - Use wagyu instead of regular ground beef. Wagyu is a rich and marbled beef, but is also much more expensive than standard ground beef.
    • Gluten free - In order to make this recipe gluten free, use gluten free hamburger buns.
    • Fattier meat - You can use a ground beef patty with 80% lean/20% fat if you want a slightly richer tasting patty.
    • Over hard eggs - Make your eggs over hard if you prefer a non-runny yolk.

    Variations

    • Jalapeño - Sliced jalapeño will make the burger spicy. You can use pickled jalapeño for a milder spice or fresh jalapeño if you want it extra spicy.
    • Pesto - Spread basil or kale pesto on the burger for a nutty zest.
    • Truffle salt - Sprinkle truffle salt on the burger to add a hint of umami flavor.
    • Pickles - Add sliced pickles for a briny accent.
    • Bacon - Add crispy bacon to make it a bacon cheeseburger.
    • Avocado - Sliced avocado adds a creamy earthiness to the burger.
    • In-N-Out Sauce - Use In N Out sauce if for a mild sauce similar to thousand island dressing.
    • Spicy Sriracha Aioli - Use Spicy Sriracha Aioli to add spicy Sriracha flavor to the burger.
    • Wasabi Mayo - Wasabi Mayo will add a pungent and unique wasabi flavor to the burger.
    • Classic condiments - Enjoy this burger with classic toppings like ketchup, mustard, or plain mayonnaise.

    Instructions

Steps to make fried egg burger, including how to season and mix ground beef.
    • Mix meat and form patties - In a mixing bowl, add ground beef and seasoning. Mix gently until combined and form the meat into 4 equal-sized patties. (Photo 1 and 2)
    • Indent patties and heat oil - Use your thumb to make an indentation in the middle of each patty. Heat a skillet or griddle over medium heat and add oil. (Photo 3 and 4)
Steps to make a fried egg burger, including how to cook burger in a skillet, melt cheese, toast buns, and fry the egg.
    • Cook patties - Once the skillet heats for about 2 minutes, add the patties to the pan. For medium rare, cook for 4 minutes on each side; for medium, cook 5 minutes on each side. In the last minute of cooking, add cheese on top of each patty if desired and place a lid on the skillet to allow the cheese to melt. (Photo 5 and 6)
    • Toast buns - While the patties cook, toast the hamburger buns until just golden brown and still soft. (Photo 7)
    • Cook eggs - While burgers cook, heat butter in separate cast iron skillet or pan over low-medium heat. Crack the egg onto skillet and sprinkle salt and pepper on top. (Photo 8)
Steps to make fried egg burger, including how to make a sunny side up egg and assemble the burger.
    • Fry eggs - Cook eggs for about 2 to 2½ minutes. Once the egg whites go from clear to white and edges start to crisp, use spatula to transfer egg to burger. (Photo 9)
    • Assemble burgers - Assemble on toasted buns with ketchup or your favorite spread, lettuce, tomato, raw sliced or grilled onions, or with your preferred toppings. (Photo 10)

Pro Tip: Let the ground beef patties temper for 10 to 15 minutes before you cook them so the meat cooks more evenly.

What to Serve with Fried Egg Burgers

This egg burger recipe is rich and flavorful. Typically, we serve it with Animal Style Fries (In-N-Out Copycat) or Spicy Cajun Fries. We also love to make veggies on the side like Roasted Asparagus with Parmesan or Furikake and Lemon Shishito Peppers for a complete and filling meal.

    Recipe FAQs

Who invented fried egg on a burger?

According to White Castle, Otto Kuase, a man from Hamburg, Germany, invented it. In 1891, he cooked a beef patty in butter then topped it with a fried egg.

Are fried eggs good for you?

Yes! Eggs are rich in protein, biotin, iron, vitamins, zinc, and magnesium. In order to make sure the eggs maintain their nutrients, don't overcook them. The longer you cook your eggs, the more nutrients you lose.

Are burgers better on the grill or on a cast iron skillet?

Skillet burgers tend to be more flavorful because they are juicier. Grilled burgers allow burger juices to drop into the grill while skillet burgers trap the juices in the pan, keeping the patties moist and delicious.

    Equipment

This super easy burger recipe calls for a few kitchen essentials that can be used for countless other recipes. For this recipe, you will need a mixing bowl, tongs, knife, cutting board; cast iron skillet, non-stick pan or standard skillet; and a silicone baking spatula.

    Storage

Store leftover fried egg burgers in the refrigerator for 2 days. Store the wet ingredients (burger, egg, lettuce, tomato, onion,) and dry ingredients (buns) in separate air-tight containers and recombine when ready. In order to reheat the patty, eggs, and grilled onions, let them temper to room temperature for 15 minutes then reheat them in a skillet over low heat until hot.

    Cooking tips

    • Be careful to not over mix the patties or the burgers will be tough.
    • Keep a close eye on your burger patties to ensure they cook to the desired level (we love ours medium rare).
    • Cook eggs low and slow to avoid over-cooking them.
    • Use fresh eggs for the best results! We highly recommend pasture-raised eggs for an extra delicious and nutritious yolk.
    • Drizzle any leftover juice in the pan onto the meat when you make the burger.
