    We love our lunchtime sandwiches. Some of our favorites are our Italian BLT and Caprese Sandwich. But sometimes we want something a little different. This Chicken Salad Wrap is great because it has it's own distinct flavor and texture, but is still light.

    • Chicken - The chicken is tender and cut into small chunks.
    • Apples and seedless grapes - Apples and grapes add sweetness to balance the other rich savory flavors.
    • Chopped walnuts - Walnuts are earthy with a nice crunch.
    • Celery - Chopped celery adds a little brightness.
    • Shallot - Shallot adds a light sharp bite.
    • Scallions - Scallions provide a little oniony flavor.
    • Dressing - The dressing is rich, tangy, and tastes delicious with the other ingredients.
    • Lettuce - Lettuce adds a nice light crunch.
    • Tortilla - We like flour tortillas for their signature mild flavor.

    Substitutions and Variations

    • Tortilla - Use your favorite soft tortilla, like spinach tortillas or gluten-free tortillas.
    • Greens - Use your favorite greens instead of lettuce, like arugula, sprouts, or spring mix.
    • Greek yogurt - Swap out mayonnaise for Greek yogurt or use a combination of the two for a lighter, healthier option.
    • Chicken salad - Use our recipe for chicken salad, simplify it, or use your favorite recipe! Add your favorite mix-ins, like golden raisins, dried cranberries, and more.

    Chicken Salad Wrap Instructions

    Steps to make chicken salad wrap, mix mayo, lemon juice and zest, dijon; toss in chicken, walnuts, grapes, apple, scallions, shallot, celery.
    • Make dressing - Add mayonnaise and/or greek yogurt, dijon mustard, lemon zest, lemon juice, kosher salt, and black pepper to a large mixing bowl. Then stir until combined. (Photo 1 and 2)
    • Make salad - Add chicken, diced apple, halved grapes, chopped walnuts, diced celery, minced shallot, and thinly sliced scallions to the bowl. Then fold the ingredients until they are evenly coated in the dressing. Be sure to scrape the bottom of the bowl while folding to ensure you incorporate all of the dressing. (Photo 3 and 4)
    Steps to make chicken salad wrap, wrap lettuce and chicken salad in a tortilla until wrapped, cut in half and serve.
    • Add the filling - Place the tortilla on a flat surface and place 1-2 pieces of lettuce horizontally in the center of the tortilla. Then add a scoop of chicken salad and gently spread it out with the back of a spoon. (Photo 5 and 6)
    • Roll the wrap - Using both hands, fold the outer edges of the tortilla inward, over the filling, about 1-2 inches. Roll the bottom edge of the tortilla up tightly, tucking in the lettuce and chicken salad as you go. Tuck and roll the wrap closed until the seam is facing down. Then cut in half and enjoy! (Photo 7 and 8)

    Pro tip - Don’t overfill or it will make the wrap difficult to roll and can cause it to fall apart.

    Wrap Tips

    • Chop all your ingredients to a uniform size for even distribution of the ingredients.
    • Use a large tortilla to make it easier to roll and prevent the ingredients from spilling out.
    • Don’t overfill the tortilla! This will make it hard to roll and it will lose its shape. We recommend using a ½ cup of filling for an 8-inch tortilla and ¾-1 cup of filling for a 10-inch tortilla.
    • Warm the tortilla to make it more pliable and easy to roll.

    What is the best type of wrap for a for chicken salad wrap?

    We prefer flour tortillas because they are soft, pliable, and don't rip easily. But You can also use whole wheat tortillas or any type that will hold together.

    Can I make chicken salad ahead of time?

    Yes, chicken salad is great for meal prepping and enjoying for a few days. Then enjoy it in a sandwich, on its own, or in a wrap.

    Ingredients 

    Dressing

    • ½ cup mayonnaise or half mayo and half greek yogurt
    • 1 teaspoon dijon mustard
    • 1 teaspoon lemon zest
    • 2 tablespoon lemon juice freshly squeezed
    • ½ teaspoon kosher salt
    • ¼ teaspoon black pepper

    Chicken Salad Wrap

    • 2 cups diced cooked chicken
    • 1 crisp apple cored and diced, honey crispy, granny apple, fuji apple
    • ½ cup seedless grapes halved
    • ½ cup chopped walnuts
    • â…” cup celery stalks about 2 medium celery stalks, diced
    • 1 small shallot minced
    • 2 scallions thinly sliced
    • 4-8 butter or romaine lettuce leaves
    • 4 large flour tortillas 8-10 inches

    Instructions

    • Make dressing - To a large mixing bowl, add mayonnaise and/or greek yogurt, dijon mustard, lemon zest, lemon juice, kosher salt, and black pepper. Stir until combined.

    Storage
    • This wrap is best enjoyed fresh. If you have leftover wrap, refrigerate it in an air-tight container then enjoy within 1 day or the tortilla will get soggy. If you have extra leftover chicken salad, refrigerate it in an air-tight container for up to 3 days.
