    Truffle Aioli is a rich and creamy dipping sauce featuring mayo, truffle oil, garlic, and lemon. This delicious homemade sauce only takes a few minutes to make and is perfect for dipping fries and vegetables or spreading on sandwiches and crostini.

    Lately, we have been experimenting with new dipping sauces and spreads. Truffle mayo is our newest favorite. It adds a delicious earthy and herbaceous flavor as a burger spread or fry dipping sauce.

    About Truffle Aioli

    • Taste - The combination of ingredients create a garlicky and lemony sauce.
    • Texture - The sauce is thick and creamy.
    • Effort - All you need to do is whisk the ingredients!
    • Time - It takes just a few minutes to assemble and whisk the ingredients.

    Key Ingredients

    Ingredients to make garlic truffle mayo aioli.
    • Mayonnaise - Mayo is the base for the truffle aioli. We prefer kewpie mayo for this recipe because it has a rich umami flavor and creamy consistency.
    • White or black truffle oil - Truffle oil has a robust aroma and a pungent and slightly garlicky taste. White truffle oil has a lighter, creamier flavor; whereas, black truffle oil has a deeper, more pungent truffle flavor. Both truffle oils are cheaper than using fresh truffles.
    • Fresh Lemon juice and zest - Fresh lemon zest and juice adds a brightness to the mayo.
    • Garlic - Fresh garlic adds the quintessential aroma to the mayo.
    • Freshly ground black pepper - Pepper gives the truffle mayo a little kick.

    Substitutions

    • Regular mayo - Instead of Kewpie mayo, you can use regular mayo. It will have less of an umami flavor but will still be delicious.
    • Sour Cream - Replace ½ cup mayonnaise with sour cream for a lighter and slightly tangy sauce.
    • Vegan - Use vegan Kewpie mayo instead of Kewpie mayo to make this homemade aioli vegan.
    • Minced Garlic - Use minced garlic instead of grated garlic if you want thicker garlic chunks.

    How to Make Truffle Aioli

    Steps to make garlic truffle mayo aioli.
    • Whisk ingredients - Add mayonnaise, truffle oil, lemon zest, lemon juice, and garlic to a bowl and whisk until combined.
    • Season - Season with salt and black pepper and add more lemon juice to taste.
    • Chill then serve - Chill for at least 30 minutes before serving.

    Pro tip - If you are making this with fries, you can blend the truffle mayo while the potatoes are frying to save time.

    What to Serve with Truffle Mayo

    This gluten free truffle mayo is an easy condiment that can be used as a burger spread or dipping sauce for french fries and veggies. Check out these dishes that pair deliciously with this easy truffle aioli:

    FAQ

    Is truffle aioli spicy?

    No, this recipe has just a very light spice from the black pepper. If you want to make it spicier, you can add a little more black pepper. You can also check out our spicy kewpie mayo if you are looking for a spicy dip.

    Is truffle aioli healthy?

    Most of the ingredients in this truffle mayo sauce are fairly healthy. The only ingredient that is unhealthy is mayonnaise, which is high in fat. In order to reduce the amount of fat, use low-fat mayo.

    Does truffle mayo have mushrooms?

    No, there are no truffle mushrooms in this truffle fries recipe. The truffle flavor comes from the truffle oil.

    Why are truffles and truffle products expensive?

    First, fresh truffles grow in only a few places and are seasonal. They also mainly grow in the wild which makes finding them very time consuming. Finally, they have a short shelf life.

    Storage

    Store this garlic aioli sauce in the refrigerator in an air-tight container up to 5 days. Before using it again, stir it softly until it reaches its original consistency. These ingredients don't stand up well to freezing.

    Top Tips

    • Use a baking spatula to scrape all of the sauce from the bowl and eliminate food waste.
    • For fresh aioli sauce, do not leave sauce out at room temperature for an extended period of time.

    Ingredients 

    • ½ cup mayonnaise
    • 1 teaspoon white or black truffle oil
    • 1 teaspoon lemon zest

    • 1 clove garlic grated
    • kosher salt or sea salt
