    Over Medium Eggs have a jammy yolk and crispy egg white making them an ideal added protein for avocado toast, breakfast rice bowls, fried rice, or a scrumptious salad. The perfectly jammy yolk blends deliciously with the other ingredients to create the perfect bite.

    Over medium eggs go well with pretty much everything and are one of our favorite ways to prepare eggs. They are similar to our jammy soft boiled eggs, but the egg whites here are crispy instead of soft. All it takes is a skillet, spatula, and a few minutes to make these versatile eggs!

    Where to Get Your Eggs

    We strongly recommend pasture-raised eggs. Hens who have access to pastures outdoors lay pasture raised eggs. As a result, the eggs are full of flavor and vitamins. This is reflected in the deep orange and red color of the egg yolks.

    Our favorite pasture-raised eggs are distributed by Vital Farms. Vital Farms works with carefully-selected farmers throughout the United States.

    Ingredients

    Ingredients for over medium eggs.
    • Fresh Eggs - Eggs are the perfect source of protein. Pasture-raised eggs are often more flavorful and contain more vitamins and omega-3 fats than cage-raised eggs.
    • Butter - Butter adds a layer of fat that keeps the eggs from sticking to the pan.
    • Salt - Salt accentuates the delicious flavor of the eggs.
    • Pepper - Pepper adds a spicy kick.

    How to Make Over Medium Eggs

    Easy steps to make over medium eggs in a cast iron or non-stick skillet.
    • Heat skillet - Heat butter in cast iron skillet or stainless steel pan over low-medium heat. Heat pan until the butter melts and becomes slightly foamy. Then crack and add eggs it into the pan or skillet and sprinkle salt and pepper on top.
    • Cook eggs - Cook over medium eggs for 2 minutes. Once egg whites go from clear to white and edges start to crisp, use a spatula to flip egg over and cook for another 2 minutes.
    • Transfer and enjoy - Use spatula to remove eggs and transfer to plate.

    Top tips

    • Cook only 1-2 eggs at one time in a pan to make it easy to flip the eggs.
    • Cook eggs low and slow to avoid over-cooking them.
    • If cooking multiple batches, allow the pan to cool for a couple of minutes between batches to avoid burning the butter and over-cooking the eggs.
    • Use fresh eggs for the best results! We highly recommend pasture-raised eggs for an extra delicious and nutritious yolk.
    • Figure out what you want to make with your over fried eggs before you start making them so your eggs are ready at the same time as your other food and you can enjoy everything hot and fresh.
    • If possible, use a non-stick pan to cook the eggs. This will ensure that the eggs come out easily once they are done cooking.

    How to Enjoy Eggs Over Medium

    There are a ton of ways enjoy these easy eggs. They are delicious over toast with fresh cracked pepper and Maldon Sea Salt Flakes or breakfast sandwiches. It's slightly runny nature also makes it ideal for a breakfast rice bowl, or fried rice.

    Over medium eggs means that the eggs are cooked until the whites are set and the eggs are jammy.

    Are over medium eggs good for you?

    Yes! Eggs are a great source of protein and vitamins. In order to make sure thee eggs maintain all of their nutrients, don't overcook them. The longer you cook your eggs, the more nutrients you lose. 

    Are over medium eggs good for dogs?

    Yes, over medium eggs are great source of nutrients and vitamins for your dogs too. Just be careful to only feed them in moderation, up to 1 egg per day (less than 1 egg if you have a small dog).

    What's the difference between over easy, over medium, and over hard eggs?

    Over easy eggs are fried, flipped, then cooked just briefly on the yolk side (the yolk will still be runny). Over medium eggs are fried, flipped, then cooked until the yolk is only a little runny. Finally, over hard eggs follow the same steps as above, but the yolk is fully cooked until hard.

    Can I use olive oil instead of butter?

    Yes, olive oil will also work to cook the eggs. However, we use butter because it is tastier.

    Can I make over medium eggs with other types of eggs, like duck eggs or quail eggs?

    Yes, you will just need to adjust the cooking time based on the size of the eggs.

    Are there any alternative methods for cooking over medium eggs?

    You can use oil instead of butter, otherwise our method is the easiest and most straight forward.

    Equipment

    This gluten free and dairy free egg recipe requires just a few kitchen essentials. In order to make this recipe, you will need a non-stick pan or standard skillet and a silicone baking spatula. If you use a standard skillet, we suggest seasoning it so it becomes non-stick and the eggs will flip more easily.     Storage

    You can refrigerate over medium eggs in an air tight container for up to 2 days. In order to reheat them, heat them in a covered pan over low heat, then flip them after 1 minute. These ingredients do not stand up well to freezing.

    Egg Grades

    The USDA grades eggs AA, A, or B based on their interior quality and the condition of their shell. Grade AA eggs tend to be the most expensive while Grade A eggs are the most widely available. Given that AA and A are the highest quality eggs, they are best for cooking. Grade B eggs are a lower standard and are usually used for frozen or dried egg products.

    Other Ways to Prepare Eggs

    While we love eggs over medium, we enjoy all types of eggs. Here are a few other ways to prepare eggs:

    • Soft Boiled Jammy Eggs - Soft Boiled Jammy Eggs have a soft yolk with a spreadable jammy texture. They are easy to make and go perfectly on a piece of toast, in a bowl of ramen, in an egg salad sandwich, on a salad, or on top of avocado toast topped with truffle salt.
    • Soft Boiled Runny Eggs -  If you want your eggs runny and perfect for going over rice, follow the steps for Soft Boiled Jammy Eggs, just boil the eggs for 5 minutes instead of 7. Our Bacon and Egg Breakfast Rice Bowl is an example of how to integrate this runny soft boiled egg into a delicious breakfast.
    • Soft Scrambled Eggs - Whenever we make scrambled eggs, we make them soft and fluffy. We love making a Soft Scramble with Burrata, Tomatoes, and Arugula.
    • Hard Boiled Eggs - Hard Boiled Eggs are great for an egg salad sandwich if you prefer a firm yolk. In order to hard boil eggs, just boil the eggs for 10 minutes then cool them and peel the shell.
    • Sunny Side Up Eggs - In oder to make sunny side up eggs, just cook them on one side until the whites are set, but the yolk is still liquid.
    • Over Easy Eggs - Our over easy eggs recipe is like sunny side up eggs, but we flip them over briefly to sear the top of the eggs. As a result, the yolk is still runny.
    • Over Hard Eggs - Over hard eggs are cooked thoroughly on each side until the yolk is firm and not runny.

    Equipment

    • 1 non-stick pan
    • 1 seasoned cast iron skillet
    • 1 spatula

    Ingredients 

    • 2 teaspoon butter
    • 1 egg
    • sea salt
    • freshly cracked black pepper

    Instructions

    • Heat butter - Heat butter in skillet over low to medium-low heat. Once melted and slightly foamy, crack egg onto skillet and sprinkle salt and pepper on top.
      2 teaspoon butter, 1 egg, sea salt, freshly cracked black pepper
    • Cook eggs - Cook for 2-3 minutes. Once whites go from clear to white and edges start to crisp, use a spatula to flip egg over and cook for another 2 minutes.
    • Transfer and enjoy - Use spatula to transfer egg to plate and enjoy.
