    The cold fall and winter months call for crisp kale and seasonal fruit and vegetables. Kale Harvest Salad featuring Taylor Farms is the perfect celebration of fall and winter flavors. This particular salad features Taylor Farm's Asiago Kale Kit and a medley of seasonal flavors, including ripe persimmons, delicata squash, and pomegranate seeds. It is a crowd-pleasing dish that is perfect for holiday gatherings or a healthy weeknight dinner.

    Taylor Farms' Asiago Kale Kit features shaved brussel sprouts, tender kale, parmesan croutons, radicchio, asiago cheese, and a lemon garlic vinaigrette. The crisp greens make an ideal bed for the sweet squash, fruit, and shallots. Every bite of the Kale Harvest Salad has a mix of crunchy healthy greens, sweet persimmon, garlicky squash, and lemony dressing.

    Ingredients

    • Taylor Farms Asiago Kale Kit - a flavor packed salad base
    • Shallot - add a fragrant, aromatic flavor. They have a mild bite compared to standard onions.
    • Pomegranate seeds - add a light sharp flavor and are a good source of antioxidants and insoluble fiber
    • Persimmons - a wintery fruit with a natural honey, cinnamon flavor. Persimmon's meat and skin soften and ripen when baked, and their delicious sweet and warm flavors are released. 
    • Delicata squash - a sweet potato squash that is a great source of potassium and dietary fiber
    • Olive oil - melds the salad flavors together
    • Garlic powder - adds the classic aromatic flavor.

    Instructions

    The Kale Harvest Salad is an approachable recipe that looks impressive. This Taylor Farms Salad Kit comes with most of the ingredients you'll need, so you will only need to prep a few more ingredients to complete the salad.

    • Preheat the oven - Heat the oven to 400°F.  
    • Prepare the squash - Slice the delicata squash in half lengthwise, scoop out the seeds, and cut into quarter-inch slices. Gently toss the delicata squash in olive oil, garlic powder, salt, and pepper.
    • Bake the squash - Arrange the squash on a parchment paper-lined baking sheet.  Cook in the oven for 15 minutes until golden.  Remove the squash from the oven and cool. 
    • Mix the salad - In a large salad bowl, add the Asiago Kale Kit ingredients, including the greens, parmesan croutons, radicchio, and asiago cheese. Add the shallots and lemon garlic vinaigrette and toss until mixed.
    • Top the salad - Top the salad with persimmons, delicata squash, pomegranate seeds, and freshly cracked pepper.

    Equipment

    This Taylor Farms Salad recipe calls for a few kitchen essentials that can be used for countless other recipes. For this recipe, you will need a baking sheet, mixing bowls, a salad spinner (optional, but it does make the lettuce dry and crisp), tongs, a knife, and cutting board.

    Storage

    Store the ingredients for this salad kit in the refrigerator for up to 3 days. These ingredients don't stand up well to freezing.

      Recently picked up a bag of Taylor Farms mix... mind you, I never found myself to be the biggest fan of kale, but this recipe made me change my mind. Initially thought the flavors would be too similar with more hearty ingredients like the squash and persimmon, but the pomegranate pulp helped cut right through that. Definitely going to make this again.
