Cherry Compote is a sweet, tart, and syrupy sauce that is the delicious on cheesecakes, ice cream, pancakes, and more. It takes just a 3 ingredients and 15 minutes to cook up this delicious cherry topping!
2cupsfresh or frozen cherriespitted, stems removed
3tablespoonsugar or honey
2teaspoonlemon zest
1teaspoonlemon juice
Instructions
Cook ingredients - Add cherries, sugar, lemon zest, and lemon juice to a medium saucepan. Cook on low heat and stir occasionally until the cherries soften and the liquid becomes syrupy, about 10-15 minutes.

Cool - Remove from the heat and allow to cool. Transfer to an airtight container or use immediately on top of desserts like ice cream or cake, or breakfast dishes, like French toast, waffles, and pancakes.

Refrigerate this simple cherry compote in an air-tight container for up to 2 weeks. You can also freeze it in a freezer safe container for up to 2 months. When you are ready to enjoy it, just let it thaw.
Cooking Tips
Keep an eye on the compote to ensure it doesn't overcook.
Don't over stir while the compote cooks or the cherries will break down too quickly.
If you find that the cherries are too big,you can cut them. Since the cherry skins are thick, the cherries won't break down too much.
If you feel the compote is reducing too quickly, turn down the heat and give it a good stir to release the fruit juices.
If too much of the liquid has cooked off, you can add 1 to 2 teaspoons of water or lemon juice.
