Lemon Shortbread Cookies with Lemon Glaze are buttery, scrumptious cookies with a creamy lemon flavor.

Step 1

Cream butter, sugar, lemon juice and zest, & vanilla extract.

Step 2

Mix in flour and kosher salt.

Step 3

Transfer dough to parchment paper then place another sheet of paper on top.

Step 4

Roll it to create a ¼-½-inch sheet of dough, then refrigerate for 1 hour.

Step 5

Use a cookie cutter to cut the dough.

Step 6

Bake for 10-14 minutes at 350°F.

Step 7

Make glaze - Whisk powdered sugar, lemon juice and zest, and vanilla paste.

Step 8

Dip cookies in glaze.

Step 8

Allow the glaze to set and dry then enjoy!
