Vegetarian Pot Pie

Step 1

Heat vegetable stock.

Step 2

Cook carrots, celery, onion, pearl onions, and mushrooms.

Step 3

Season and stir in butter and flour to make a roux.

Step 4

Add broth, mustard, and heavy cream.

Step 5

Stir in corn and peas and remove from the heat.

Step 6

Cover pie with puff pastry sheet then brush with egg wash.

Step 7

Cut slits then bake for 25 min or until puff pastry is golden brown.
