Roasted Garlic Mashed Potatoes

Roasted Garlic Mashed Potatoes features silky yukon potatoes flavored with fragrant roasted garlic, Parmigiano-Reggiano, sour cream, and chives.

Step 1

Slice quarter inch off top of the garlic bulbs and drizzle with olive oil.

Step 2

Wrap garlic in foil then bake.

Step 3

Boil potatoes for 20-25 minutes.

Step 4

While potatoes cook, make cream & butter mixture.

Step 5

Strain and mash potatoes.

Step 6

Fold in butter cream mixture, garlic, parm, sour cream, salt, pepper, and chives.

Step 7

Top with chives and enjoy!
