Passion Fruit Cake

Step 1

Heat oven to 350°F and line baking pan with parchment paper.

Step 2

Mix dry ingredients - Whisk flour, baking powder & soda, & kosher salt.

Step 3

Mix wet ingredients - Cream together butter and sugar.

Step 4

Mix in eggs one by one, then vanilla extract.

Step 5

Mix in flour mixture and sour cream.

Step 6

Transfer batter to pan then bake for 45-55 min.

Step 7

While cake bakes, make mascarpone frosting.

Step 8

Whip heavy whipping cream until it forms stiff peaks.

Step 9

Whip mascarpone, powdered sugar, and vanilla

Step 10

Combine whipped cream and mascarpone.

Step 11

Spread on cake then add passion fruit curd and puree.
