Passion Fruit Cake
Heat oven to 350°F and line baking pan with parchment paper.
Mix dry ingredients
- Whisk flour, baking powder & soda, & kosher salt.
Mix wet ingredients
- Cream together butter and sugar.
Mix in eggs one by one, then vanilla extract.
Mix in flour mixture and sour cream.
Transfer batter to pan then bake for 45-55 min.
While cake bakes, make mascarpone frosting.
Whip heavy whipping cream until it forms stiff peaks.
Whip mascarpone, powdered sugar, and vanilla
Combine whipped cream and mascarpone.
Spread on cake then add passion fruit curd and puree.
