Lemon Curd Coffee Cake
Heat oven to 350°F and line baking pan with parchment paper.
- Mix flour, sugar, salt, cinnamon, & butter then refrigerate.
Mix dry cake ingredients
- Whisk flour, baking powder & soda, & salt.
Mix wet ingredients-
Cream butter, sugar, vanilla, lemon juice & extract, & eggs.
- Mix in flour mixture & sour cream to wet mixture.
Transfer batter to pan then layer in streusel and lemon curd.
Bake for 45-55 min.
While cake bakes, make vanilla icing.
Whisk powdered sugar, milk, vanilla, & salt then drizzle on cooled cake.
Enjoy with coffee or tea!
