Lemon Curd Coffee Cake

Step 1

Heat oven to 350°F and line baking pan with parchment paper.

Step 2

Make streusel - Mix flour, sugar, salt, cinnamon, & butter then refrigerate.

Step 3

Mix dry cake ingredients - Whisk flour, baking powder & soda, & salt.

Step 4

Mix wet ingredients- Cream butter, sugar, vanilla, lemon juice & extract, & eggs.

Step 5

Combine - Mix in flour mixture & sour cream to wet mixture.

Step 6

Transfer batter to pan then layer in streusel and lemon curd.

Step 7

Bake for 45-55 min.

Step 8

While cake bakes, make vanilla icing.

Step 9

Whisk powdered sugar, milk, vanilla, & salt then drizzle on cooled cake.

Step 10

Enjoy with coffee or tea!
