Creamy Pesto Gnocchi

Creamy Gnocchi Pesto is a rich and satisfying dish featuring melt-in-your-mouth potato dumplings in a bright and herby ricotta pesto.

Step 1

Combine ricotta, pesto, lemon zest and juice, and salt.

Step 2

Bring salted water to a rolling boil over medium-high heat.

Step 3

Add gnocchi to the water and cook for about 3 min.

Step 4

Drain gnocchi and reserve a cup of gnocchi water.

Step 5

Mix gnocchi in ricotta pesto mixture.

Step 6

Toss in reserved water then serve and enjoy!
