What is Yellowtail?

Yellowtail is Japanese Amberjack. Its texture is soft and fatty with a mild flavor.

Step 1

Make Japanese rice on a stovetop or in rice cooker then place in bowl.

Step 2

Thinly slice hamachi at a 45° angle then place on top of rice.

Step 3

Top bowl with ikura and scallion.

Step 4

Enjoy with soy sauce and wasabi on the side.
