Unagi Sushi (Eel Hand Roll)

Step 1

Make Japanese rice on a stovetop or in rice cooker.

Step 2

Make sushi rice - Season cooked rice with rice vinegar then let rice cool.

Step 3

While rice is cooking, make unagi sauce by cooking mirin, sugar, sake, and soy sauce together.

Step 4

Brush unagi with unagi sauce then bake for 12 to 15 min at 350° F.

Step 5

Broil for 2 min, until bubbling and caramelized. Let cool.

Step 6

Cut nori sheets in half then add a layer of rice to about one third of a nori sheet.

Step 7

Layer in cucumber, daikon sprouts, and unagi strips then add sesame seeds on top.

Step 8

Roll inward and form a cone, then serve with wasabi, pickled ginger, and soy sauce.
