Turkey and Quinoa Stuffed Bell Peppers

Preheat the oven to 350° F.


Step 1

Cook quinoa in pot or rice cooker.

Step 2

Cut bell peppers in half lengthwise, scoop out seeds and white membrane.

Step 3

Cook onions, turkey, tomatoes, spinach, chili flakes and garlic powder in pan over medium heat.

Step 4

Add cooked quinoa and parmesan then scoop mixture into bell peppers.

Step 5

Cover bell peppers in baking dish and bake for 30 min.

Step 6

Uncover and bake for an additional 10 min, then shave parmesan on top and serve.
