Puff Pastry Vegetable Tarts

Step 1

Whip goat cheese mixture in food processor.

Step 2

Heat oven to 425°F and line sheet pan with parchment paper.

Step 3

Slice puff pastry into 9 even slices.

Step 4

For the egg wash, whisk an egg in a separate bowl.

Step 5

Toss vegetables with kosher salt, black pepper, & olive oil.

Step 5

Spread goat cheese mixture onto each puff pastry.

Step 6

Top with veggie medley and brush edges with egg wash.

Step 7

Bake for 20 min until golden, then garnish with herbs and enjoy!
