Pear and Prosciutto Rocket Salad

Heat oven to 375°F

Step 1

Arrange prosciutto on parchment paper on baking sheet.

Step 2

Cook for 10-15 minutes until crispy.

Step 3

Transfer the prosciutto to a wire rack to cool.

Step 4

While prosciutto cooks, whisk maple balsamic vinaigrette ingredients.

Step 5

Make salad - Add arugula to arge mixing bowl and toss in dressing.

Step 6

Mix in shallot and walnuts, then top with sliced pear, crispy prosciutto and sliced Parmigiano.

Step 7

Sprinkle with sea salt and freshly cracked black pepper then enjoy!
