Parmesan Truffle Fries with Truffle Aioli

Place cut potatoes in large bowl of cold water then chill in refrigerator for 30 min.


Step 1

Add about 3 inches of oil to large pot or dutch ocean and heat oil to 300˚F.

Step 2

Fry 1/3 of potatoes for 5 minutes.

Step 3

Fry potatoes again at 400˚F for about 5 minutes, until golden brown.

Step 4

Remove fries from oil and place in a mixing bowl.

Step 5

Repeat steps 1 - 4 for rest of potatoes.

Step 6

Drizzle with truffle oil and season with parm, salt, and pepper then serve!

Step 7

Enjoy with Truffle Aioli dipping sauce.
