Step 1

Peel, core, and dice apples into small pieces.

Step 2

Place diced apples in a dutch oven on medium heat. Add the lemon juice and stir.

Step 3

Bring apples to boil, then simmer for 25-30 minutes, until apples are soft.

Step 4

Puree apples in blender until smooth.

Step 5

Mix together sugar, egg, egg yolks, and cinnamon until smooth.

Step 6

Combine mixture,  butter, and apple purée in pot and stir.

Step 7

Cook on low heat and stir until mixture thickens, about 7 minutes.

Step 8

Transfer apple curd to jars and refrigerate once cooled.

Enjoy apple curd with sliced fruit, biscuits, oatmeal, crepes, and more!
