How to Make a Spicy Kani Roll

Step 1

Make Japanese rice on a stovetop or in rice cooker.

Step 2

Make sushi rice - Season cooked rice with rice vinegar then let rice cool.

Step 3

Make spicy mayo - whisk together Kewpie mayo, Sriracha, and togarashi.

Step 4

Shred kani sticks and combine with spicy mayo.

Step 5

Spread rice on nori then sprinkle tobiko or sesame seeds on top of rice.

Step 6

Flip so nori is on top, then add spicy mayo/crab mixture to center.

Step 7

Lift long side of nori and roll it over to touch other side.

Step 8

Shape roll - Place bamboo mat on top of roll and gently squeeze  to form roll.

Step 9

Slice roll into 8 pieces then serve with shoyu and wasabi.
