Healthy Corn and Zucchini Fritters

Step 1

Grate zucchini then salt it and press it to drain moisture.

Step 2

Mix zucchini, corn, shallot, panko, flour, cheese, garlic powder, pepper, salt, & basil.

Step 3

Beat egg in a small bowl and mix it in until combined.

Step 4

Heat oil in pan over medium to high heat.

Step 5

Cook fritters for 3-4 minutes on each side, until each side is golden brown.

Step 6

Top with Greek yogurt then sprinkle basil and roasted corn.
