Hamachi Kama (Yellowtail Collar)
Turn the broiler on the high setting (500°F).
Arrange collars on baking sheet then brush with mirin.
Sprinkle collars with kosher or sea salt.
Broil for 7-10 min, until lightly browned
Squeeze lemon juice then enjoy.
Enjoy on its own or with rice and a Japanese side.
