Fuyu Persimmon Galette
Preheat the oven to 400F
Wash the persimmons
In a food processor or by hand, make the dough.
Place dough on baking sheet or plate then freeze.
In a large mixing bowl, mix persimmon slices, brown sugar, vanilla, and cinnamon.
Remove dough from freezer then arrange the persimmon slices in center of the dough circle, leaving 2 inch perimeter at edge of dough.
Fold the sides of the 2 inch dough perimeter inward and onto the fruit filling.
Bake for 45 minutes or until golden brown, then enjoy with whipped cream or ice cream.
