(Pasta alla Norma)
Cook sliced eggplant in olive oil over medium heat.
- Add garlic, oregano, chili flakes to pan.
add canned tomatoes
to the pan and stir.
in a large pot until al dente.
Toss pasta, sauce, and eggplant
together. Then stir in the fresh basil.
Serve with fresh grated cheese and garnish with eggplant slices!
