Eggplant Pasta (Pasta alla Norma)

Step 1

Cook sliced eggplant in olive oil over medium heat.

Step 2

Cook sauce - Add garlic, oregano, chili flakes to pan.

Step 3

 Then add canned tomatoes to the pan and stir.

Step 4

Cook pasta in a large pot until al dente.

Step 5

Toss pasta, sauce, and eggplant together. Then stir in the fresh basil.

Step 6

Serve with fresh grated cheese and garnish with eggplant slices!
