Crispy Pancetta & Potato Crostata
Crispy Pancetta and Potato Crostata
is a savory tart full of flavor. It features a buttery crust, Grana Padano cheese, and sliced yukon potatoes topped with pancetta.
Make the crust
-In food processor or by hand
Form dough into a ball then roll into a disk and store in freezer.
until crispy, about 10 min.
in leftover pancetta oil until softened, about 5 min.
Pre-heat oven to 400°F.
Make egg wash
- Whisk cracked egg and a tablespoon of water.
Roll dough into 12-inch wide circle, leaving 2 inches around perimeter
Spread cooked shallots, grated Grana Padano, and potato slices.
Add additional layer of Grana Padano, black pepper, and egg wash.
Bake for 45-50 min, then with 3 min remaining, sprinkle pancetta & bake.
