Chocolate Truffle Mochi

Step 1

Mix mochiko, cocoa powder, sugar, and water.

Step 2

Microwave for 3 minutes, mix, then microwave for 3 more min.

Step 3

Transfer mochi to working surface covered in potato starch.

Step 4

Cut mochi into workable pieces then form into balls.

Step 5

Form disc, place truffle into center, then fold sides over truffle.

Step 6

Roll each mochi in cocoa powder.

Step 7

Place each mochi in cupcake liner to keep from spreading & sticking.

Step 8

Enjoy or give them away as a holiday gift!
