Cheese Quesadilla with Pan Roasted Vegetables

Step 1

Cook onion and bell pepper over medium heat.

Step 2

Stir in diced green chiles and black beans.

Step 3

Fill the quesadilla with cooked ingredients.

Step 4

Cook the quesadilla then garnish and serve.

Step 5

Make the Chipotle Mayo.

Step 6

Blend mayo, chipotle peppers in adobo sauce, lime juice, kosher salt, in a blender or food processor.

Step 7

Pulse until the mixture is smooth and creamy then serve with quesadilla.
