Breakfast Hash with Sweet Potatoes and Eggs

Preheat oven to 400°F

Step 1

Parboil potatoes for 5 minutes, drain the water, then set aside.

Step 2

Cook bacon in skillet then set bacon aside.

Step 3

Fry sweet potatoes in oil until crispy then add onion and bell pepper to fry.

Step 4

Fold in bacon, cheese, & green onions, then season with salt and pepper.

Step 5

Add eggs then cook in oven for 7 minutes.

Step 6

Add avocado, hot sauce, and ketchup and enjoy!
