Ajitama (Soft Boiled Ramen Eggs)

Step 1

Boil the water then boil the eggs.

Step 2

As eggs cook on the stovetop, fill a bowl with cold water and ice.

Step 3

Cool eggs in the water then peel them.

Step 4

Make the marinade - Whisk soy sauce, mirin, sake, and brown sugar

Step 5

Marinate the eggs in the refrigerator for at least 8 hours or overnight.

Enjoy in ramen or in a breakfast rice bowl.
